    Why not instead simply say "sub" or "substitute"?

    Apparently the meaning is replace or "sub in". For example, a recipe says you can "sub out" onions for scallions, meaning you can replace scallions with onions. "Sub out" doesn't seem to make literal sense the way the term often is used.
