The word is the contracted from the Ilokano word pinakebbet, meaning "shrunk" or "shriveled." The original Ilocano pinakbet uses bagoong of fermented monamon or other fish, for seasoning sauce, while further south, bagoong alamang is used. The dish usually includes bitter melon (ampalaya).
