    Sweet cassava, also known as Manihot esculenta or yuca, is a woody shrub of the Euphorbiaceae (spurge) family. It is extensively cultivated as an annual crop in tropical and subtropical regions for its edible starchy tuberous root, which is a major source of carbohydrates. The sweet variety of cassava is low in cyanide and can be cooked and eaten immediately after harvesting. This is in contrast to the bitter cassava which requires soaking and drying before it is safe to eat.
