white sturgeon
The White Sturgeon is a species of sturgeon in the family Acipenseridae. It is one of the largest species of freshwater fish, native to the west coast of North America, from Alaska to Central California. They are anadromous, meaning they migrate from the sea into freshwater to spawn. They are recognized by their elongated body, absence of teeth, and presence of barbels near their mouths. They are slow-growing and can live to be over 100 years old. They are an important food source, highly prized for their eggs, which are used to make caviar.
