The human hand, when wet, is inherently lacking in friction, and the taper of the human fingers means that the familiar "handshake hold" will almost certainly fail to "hold" when under load. "Sailor's grip" involves closing the fingers and thumb around the WRIST of the other person, such that the load is borne by the thickest part of the hand i.e. the place where the thumb attaches to the wrist. "Sailor's grip" is far less likely to fail in the wet and cold, than the "handshake" grip.
