    Polyphenols () are a large family of naturally occurring organic compounds characterized by multiples of phenol units. They are abundant in plants and structurally diverse. Polyphenols include flavonoids, tannic acid, and ellagitannin, some of which have been used historically as dyes and for tanning garments.

    Polyphenols are a structural class of mainly natural, but also synthetic or semisynthetic, organic chemicals characterized by the presence of large multiples of phenol structural units. The number and characteristics of these phenol structures underlie the unique physical, chemical, and biological properties of particular members of the class. They may be broadly classified as phenolic acids, flavonoids, stilbenes, and lignans. The name derives from the ancient Greek word πολύς and the word phenol which refers to a chemical structure formed by attaching to an aromatic benzenoid ring, an hydroxyl group akin to that found in alcohols. The term polyphenol appears to have been in use since 1894.
