    I searched "Panocha / Spanish to English Translation-Spanish Dict" https://www.spanishdict.com/translate/panocha ; and I like the panocha made in New Mexico to celibrate Lent. Mom made Capirutada during Lent and nopalitos with powdered shrimp and albondigas, too.

      Panocha it is in fact used durent Lent. This is a name only in South West USA, in specific New Mexico. For Mexican American Families as you mentioned Capirotada is a dish serve in cuaresma. Not only ship powder is used on nopales; dried shrimp is use to make tortitas de camaron. I personally was not a fan of the dish, but it brings back great memories.
