Wikipedia

  1. Baijiu

Baijiu (Chinese: 白酒; pinyin: báijiǔ; lit. 'white (clear) liquor'), also known as shaojiu (烧酒/燒酒), is a colorless Chinese liquor typically coming in between 35% and 60% alcohol by volume (ABV). Each type of baijiu uses its own type of qū for fermentation to create a distinct and characteristic flavor profile. Baijiu is a clear liquid usually distilled from fermented sorghum, although other grains may be used; some southeastern Chinese styles may employ rice or glutinous rice, while other Chinese varieties may use wheat, barley, millet, or Job's tears (Chinese: 薏苡; pinyin: yìyǐ) in their mash bills. The qū starter culture used in the production of baijiu is usually made from pulverized wheat grain or steamed rice.Because of its clarity, baijiu can appear similar to several other East Asian liquors, e.g. Japanese shōchū (25%) or Korean soju (20–45%), but it often has a significantly higher alcohol content (35-60%).

Wikidata

  1. Baijiu

Baijiu; Cantonese: bak jau, or shaojiu is a Chinese distilled alcoholic beverage. The name baijiu literally means "white liquor", "white alcohol" or "white spirits". Baijiu is often translated as "wine" or "white wine". However, it is actually a distilled liquor, generally about 40–60% alcohol by volume. Baijiu is a clear drink usually distilled from sorghum, although sometimes other grains may be used; baijiu varieties produced in southern China are typically made from glutinous rice, while those from northern China are generally made of sorghum, wheat, barley, millet, or occasionally Job's tears. The jiuqu starter culture used in the production of baijiu mash is usually made of pulverized wheat grains. Because of its clarity, baijiu can appear similar to several other liquors, but generally has a significantly higher ABV than, for example, Japanese shōchū or Korean soju.
