The pistachio is a dry fruit of an oblong figure, pointed at both ends about half an inch in length, and a third of an inch in thickness: it has a double shell, the exteriour one membranaceous and thin, and the inner hard, tough and woody: the kernel is of a green colour and a soft and unctuous substance, much like the pulp of an almond, of a pleasant taste: pistachios were known to the ancients, and the Arabians call them pestuch and festuch, and we sometimes fistich nuts.
