Barat Sprout Creek Farm stretches across two hundred roomy acres in Duchess County, New York. Along with making cow milk cheese that takes the soil, seasons, grasses, and mood of the cows into serious consideration, Sprout Creek Farm is dedicated to education. The farm's mission is to connect people physically and spiritually to the land in the hopes of making them cognizant of their role in the living world. With such education, Sprout Creek believes that people will become more environmentally mindful and conscious and make informed choices that can only improve the state of the world around them. St. Madeleine Sophie Barat founded the Society of the Sacred Heart in 1800 in order to give women a place to devote their spiritual life to education. Barat, a diminutive wheel of cow milk cheese, is named for this saint. Sharp and easily grated, the cheese has a nutty and full flavor.
