    Tulumba or Bamiyeh (Persian: بامیه) is a deep-fried dessert found in Turkey and the regional cuisines of the former Ottoman Empire. It is a fried batter soaked in syrup, similar to jalebis and churros. It is made from unleavened choux pastry dough (usually about 3 cm long) piped with a pastry bag using an open star or similar tip. It is first deep-fried to golden colour and then sugar-sweet syrup is poured over it when still hot. It is eaten cold.

    Tulumba has its roots in Turkey / Anatolia but is a popular dessert even in Croatian, Greek, Bosnian, Macedonian, Bulgarian, Serbian and Albanian cuisine consisting of fried batter soaked in syrup. The sweet is also found in Egypt and known as Balah Al-Sham Arabic: بلح الشام‎. It is a popular sweet. It is made from unleavened dough lump given a small ovoid shape with ridges along it using an 'icing' bag with a special nozzle. It is first deep-fried to golden colour and then sugar-sweet syrup poured over it when still hot. It is eaten cold. This dessert is consumed throughout the Balkans and Anatolia.
